Johnny Cakes

Growing up as a child in the Caribbean, this was paired with red herring and boiled egg , sliced open with cheese or just jam. A sweet fried bread that’s so delicious and enjoyed across many Caribbean islands.

One thing about me, I have to satisfy the craving. Hubby approved and it is always nice to share a peace of myself with those close. I hope you enjoy!

Ingredients:

3 cups All purpose flour
2 tsp Baking powder
5 tbsp Sugar
3 tbsp Butter (room temperature)
1/4 tsp Salt
Oil for frying( I used about 1/3 cup and Organic Extra Virgin Olive Oil)
1 cup of Water Extra flour for dusting

Directions:

Mix the flour, baking powder, sugar and salt in a large bowl using a fork( large)

Take your 3 tbsp of butter and slice it in the large bowl with your flour mixture

Work the butter into the flour with your fingers until fully blended. Then, a little at a time, add your cup of water to the mixture and mix in with your fork until the dough becomes soft. You can also add a little bit more water to get the texture if needed.

Sprinkle some flour on a clean surface and place your dough on the counter. Knead your dough for 3 more minutes to make sure all ingredients are combined well. Allow the dough to rest for 30 minutes.

After 30 minutes, flour your hands and the counter again to tear and roll 12 dough balls to place on the side.

Heat your oil up in the frying pan. While your oil is heating up, take a rolling pin and flatten the dough balls. ( do not flatten them too much, just slightly)

Do not over crowd frying pan. Fry until golden brown and then flip onto the other side.

Place Johnny cakes on a cooling rack or on a plate with a piece of paper towel to soak up some of the oil.

Enjoy with your favorite spread , cheese or eat it by itself!
